Directions
1. Whisk orange zest, orange juice and honey together in a saucepan over medium-high heat. Bring to a boil, reduce the heat, then simmer for 7-8 minutes, until reduced by half and thickened. Set aside.
2. Preheat broiler to high and line a baking sheet with foil. Place salmon on baking sheet, drizzle with olive oil, and season with salt and pepper.
3. Brush salmon with half of the glaze and broil for 4 minutes. Remove from the oven and brush with remaining glaze. Top each filet with a slice of blood orange, and return to the oven to broil an additional 2-3 minutes, or until salmon is cooked-though and flakes easily with a fork.
